When the food to be preserved is fresh fish and shrimp, the package of the modified atmosphere packaging machine can be filled with 30% nitrogen + 13% oxygen + 57% carbon dioxide, and the preservation period is generally about 15 to 30 days.
2. The application of CO2 in food packaging
High concentrations of CO2 have a strong inhibitory effect on molds and enzymes, and at the same time have a "poisonous" effect on aerobic bacteria, which can hinder the reproduction of microorganisms such as aerobic bacteria and molds, prolong the stagnation period and exponential growth period of microbial growth, and play an important role. Anti-corrosion and anti-mildew effect. For example, Bacillus sp., Aspergillus and Penicillium softening, when the concentration of carbon dioxide reaches about 10%, the reproduction rate of the three shows a significant downward trend. CO2 is easily absorbed by the moisture and fat in the food, causing the whole package to collapse.
